Meal-Prep Series: Mini Egg Frittatas

As a postpartum doula, I'm committed to supporting new parents on their journey to wellness and self-care during this transformative phase. In my opinion, meal prepping is a critical component of care for the postpartum time and helps so much with the demands of those early months. Today I am making a delicious and nutrition-packed option: mini egg frittatas.

These mini egg frittatas are a cinch to prepare, can be adapted to whatever veggies and herbs you have available, and are a great source of protein. Protein plays a vital role in postpartum recovery and overall health. It helps repair tissues, boosts immunity, and provides the energy needed to keep up with the demands of caring for a newborn. Eggs, in particular, are an excellent source of high-quality protein that contains all the essential amino acids necessary for optimal bodily function.

Mini Egg Frittatas

Ingredients

½ zucchini cut into a small dice

½ onion cut into a small dice

¼ cherry tomatoes, quartered

½ cup feta cheese

½ cup Greek yogurt or cottage cheese*

8 eggs

1 tsp dried oregano

small handful of fresh basil

salt and pepper to taste

olive oil for drizzling

Instructions

  1. Preheat oven to 350° F.

  2. In a large cast iron skillet heat the olive oil over medium high heat. Sauté the diced zucchini and onion until transluscent and soft, about 10 minutes. Season with salt and pepper.

  3. Spread the sautéed vegetables and cherry tomatoes evenly across the bottom of a sprayed regular sized muffin pan.

  4. In another bowl, whisk together the 8 eggs and season with salt and pepper. Add the dried oregano, torn basil, feta cheese, and cottage cheese.

  5. Fill the remaining area in the muffin tin with the egg mixture, gently stirring the ingredients together. Bake in the oven for 12-15 minutes until the eggs are completely set.
